At Uig Sands, the restaurant sits within one of the most dramatic coastal landscapes in the Outer Hebrides, overlooking the vast white sands of Tràigh Uige, with machair, sea and rugged hills beyond. 

Dualchas worked with the clients from early feasibility and funding to create a destination restaurant on Lewis centred on local food and seafood. Developing the business plan and building together allowed the guest experience, professional kitchen and operational requirements to inform one another.

Arrival and revelation
A grassy escarpment conceals Traigh Uige on approach. Guests enter alongside the landform and move towards the bar before the landscape is gradually revealed. In the dining room, floor-to-ceiling glazing opens to the full breadth of the sands and sea.

The commercial kitchen was planned directly with the chef, ensuring efficient relationships between preparation, storage, servicing and dining. Outside, stone and weathered timber give the simple form weight and durability in the Atlantic climate; inside, a restrained palette allows food, light and landscape to take precedence.

A business shaped with its building
Uig Sands opened in 2019 and has become a destination in its own right, supporting employment and drawing visitors to this remote part of Lewis. It shows the value of involving the architect early, when commercial planning and design can develop as one proposition.
